Pumpkin Bars

Ingredients

  • 4 large eggs
  • 1 cup vegetable oil
  • 2 cups sugar
  • 1 16 oz. can pumpkin
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1/2 tsp ginger, ground
  • 1/2 tsp cloves
  • 1/2 tsp nutmeg

Cream Cheese Frosting

  • 6 ounces cream cheese, softened
  • 4 tbsp half and half
  • 6 tbsp butter, softened
  • 2 tsp vanilla
  • 3 1/2 cup powdered sugar

Instructions

  1. Mix together eggs, sugar and oil in large bowl of stand mixer or with hand mixer.

  2. Add pumpkin and mix thoroughly.

  3. Sift together flour,  baking powder, baking soda, salt and spices.

  4. Add dry ingredients to pumpkin mixture in three batches, mixing well with each addition.

  5. Pour into a lightly greased jellyroll pan, lined with parchment paper.

  6. Bake at 375 for 20 minutes.  

Frosting

  1. Mix all ingredients.  If frosting is too thin, add powdered sugar.  If too thick, add half and half.
